Is Milk Fed Pork Any Different?
We have 3 jersey milk cows on the farm that we milk once per day. We use their milk to make our own cream, cheese, ice cream, and butter. All of the excess whey, skim and whole milk goes to the pigs. We add the milk to ground grain and forages that we grow and grind on farm. This "piggy porridge" is fermented for 24hrs so that the grains are easier for the pigs to digest and assimilate. In other words, fermented grains are more nutritious for pigs for the same reason they are for humans. So if you wouldn't eat white bread your pork shouldn't either! The extra milk fat also helps ensure that the fat soluble vitamins A, D, and K in their forages are also enzymatically available. All of this takes a lot more time and effort from a production stand point, so is it really worth it!? Well in 2016 we had our pork tested at the University of Toronto's Department of Nutritional Sciences for its omega 3:6 ratio. When the results came back we were amazed. Our pork had "5x more omega 3s than anything you can find in the supermarket". The tests even showed the presence of "omega 3 oils commonly found in fish"! During a phone conversation, the lead scientist Dr. Richard Bazinet told us our pork was “at the higher end of the range for the other pasture guys, this is likely because of what [we] are feeding them.”

Is Berkshire Pork Any Different?
Berkshire pigs are a heritage breed that originates from the English county of Berkshire. We chose to raise them on our farm for several reasons: they are friendly, good mothers, very hardy, well suited for pasture and, most importantly, they taste fantastic! Berkshire pork has unrivalled marbling characteristics due to a rare genetic trait that increases inter-muscular fat. In fact, Berkshire pork has been prized in Japan, where it is known as Kurobuta (the pork version of Kobe beef) for over 300 years. These genetics combined with our unique fermented grain, forage, and milk feeding program guarantees that this will be the best pork you have ever eaten.

I DON'T HAVE A Stand uP/Chest FREEZER! HOW MUCH DO THEY COST AND WHERE DO I GET ONE?
Cost and Sourcing:
- The cost of a new freezer will range from $200-$1000 depending on the size you need. Home Depot or Sears both carry reliable brands. Frigidaire is our favourite.
- Used freezers are typically 50% the cost of a comparable new freezer. They can be sourced on Kijiji, Facebook, or your local Habitat for Humanity: Re-Store. We do not recommend purchasing anything but a modern EnergyStar freezer!
Chest vs Stand Up:
- Chest freezers (horizontal) are more storage efficient because it is easier to stack things without the risk of everything toppling out. They also use less energy because cold air sinks and every time you open the door to grab your favourite cut of meat all the cold air doesn't pour out and end up on the floor.
- Stand Up freezer take up less floor space, and are easier to find things in.
Tips:
- Buy the biggest freezer you have space for. They are handier than you think and they fill up quick!
- Remember that a half of pork and a quarter of beef each take up approximately 5 cubic feet.
Is it expensive to run a freezer year round?
No! Given the high energy efficiency of modern freezers it costs between $2-5* per month to operate a 5-25 cubic feet deep freeze. For the price of a cup of coffee a month you can have an entire years worth of food at the ready!
